As for what Blizzard has in mind for Chromie specifically, who knows? Other than another Sethria's Roost type celebrity hunt, I presume she won't reappear until an expansion after Mists of Pandaria.

She's going to do whatever she can to make sure that doesn't happen.

Chromie's always been mortal. The only immortal dragons were the Aspects, which we could technically kill anyway (Malygos, Deathwing). They're still dragons, so unless they get sick or do something stupid they probably still have long lives ahead of them.
